Several things, including actual information about physics, chemistry, astronomy; it would have been nice to have had a choice between sciences and humanities. I'd also have enjoyed learning more about botany. Other than that, I always wanted to learn basic woodworking skills (now I wouldn't trust myself not to sever an artery) and I was pulled out of art before I learned how to do highlights on shiny surfaces and things like that; the teacher had actually promised to show me how to do that. I used to also want to learn more languages; I tried to talk the school into letting me learn either Ancient Greek or Russian. But I later discovered that I am terrible with non-Latin alphabets, plus I think aspect would have driven me homicidal, so they were wiser than I.
More physics. It wasn't well taught at my school and I dropped it when it became optional.
Also, what passes for the constitution and system of government - this was the UK, so it wasn't mentioned at all at school for fear of introducing political bias into the curriculum. I think everyone should learn about the government of their country so they can either participate in it or challenge it.
To be comfortable with knowing the material is too challenging for me and that I am going to do badly.

Fluent spoken French That would have required me to go to a French school, French immersion would not have been enough in my area and time. I have met a lot of immersion students who were not fluent with a good accent.
